Recipe: Fresh Strawberry Ice Cream

Fresh Strawberry Ice Cream

About a month ago, we bought an ice cream maker since we didn't get one for our wedding. The first couple of times we used it I just made vanilla ice cream. This time we both wanted something different. Matt chose strawberry ice cream. But I was a bit of a skeptic. See I like strawberries and I like ice cream but I am not a huge fan of strawberry ice cream. Anyway, I made it for him and it turned out pretty tasty but next time it will need a little less sugar.

1 1/2 cups fresh strawberries, hulled*
3/4 cup whole milk
2/3 cup granulated sugar (maybe add a 1/2 cup instead)
pinch of salt
1 1/2 cups heavy cream
1 1/2 teaspoons pure vanilla extract

Place strawberries in food processor with a fitted chopping blade and pulse strawberries until rough/finely chopped.
Reserve in bowl.
In medium bowl, whisk milk, sugar, and salt until sugar is dissolved.
Stir in heavy cream and vanilla.
Stir in reserved strawberries and all juices.
Cover and refrigerate 1 to 2 hours.
Pour mixture into frozen freezer bowl and let mix for 15-20 minutes.
Enjoy!

*Frozen strawberries can be substituted for fresh strawberries.
