Lemon Poppy Seed Muffins


Lemon Poppy Seed Muffins (Recipe from Pinterest)

Muffins:
2/3 cup sugar
Grated zest of 2 lemons
Juice from 1 lemon
2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup sour cream
2 eggs
1 1/2 teaspoons vanilla
1 stick (8 tablespoons) butter, melted and cooled
2 tablespoons poppy seeds

Lemon Glaze (optional):
1 cup confectioners sugar
3-4 tablespoons lemon juice

Preheat oven to 400 degrees.
Line a muffin tin with paper muffin cups.
Mix sugar and lemon zest together in a bowl.
Whisk in flour, baking powder, baking soda, and salt. 
In another bowl, mix together sour cream, eggs, vanilla, butter and lemon juice.
Pour wet ingredients over dry ingredients and stir to blend.
Batter may have lumps which is ok. Don't want to over mix.
Stir in poppy seeds to batter. 
Divide batter evenly among the muffin cups.
Bake 18-20 minutes until tops are golden and knife or toothpick is inserted and comes out clean.
Let muffins cool completely before adding glaze.


Glaze (optional):
In a small bowl, mix the confectioners sugar and lemon juice till mixed well.
Using spoon, drizzle glaze over the top of cooled muffins or coat muffin tops completely.

(My muffins fell due to my high elevation! I am still working on what to add or subtract to make sure they don't fall next time.)
