Lately, I am in love with the color purple. I find that I have more clothes in my closet that are purple than I ever thought I would. Maybe that is because I miss being able to watch the Colorado Rockies at Coors Field and this is my way of channeling them. Or maybe its just a like the color (and just about every shade of the color).

Happy Friday y'all! This week has gone by so fast that I can't believe it is already the weekend. Do you have any big plans? To start, I am headed with a big group of ladies to see "Magic Mike" and then see what happens after that. If you see it, let me know your thoughts. I will post mine next week. Try to stay cool! My hometown is under fire right now. This last weekend a fire broke out in the mountains west of Colorado Springs. Within the past couple of days, the fire has grown due to the dry conditions and wind. This fire has burned over 15000 acres since then and since last night many homes and other structures have been burned. My family and friends are all safe as of right now. I feel so helpless being over a thousand miles away and wish there was something I could do.

Please keep Colorado Springs people and firefighters in your thoughts and prayers.

Recipe: Fresh Strawberry Ice Cream

Fresh Strawberry Ice Cream

About a month ago, we bought an ice cream maker since we didn't get one for our wedding. The first couple of times we used it I just made vanilla ice cream. This time we both wanted something different. Matt chose strawberry ice cream. But I was a bit of a skeptic. See I like strawberries and I like ice cream but I am not a huge fan of strawberry ice cream. Anyway, I made it for him and it turned out pretty tasty but next time it will need a little less sugar.

1 1/2 cups fresh strawberries, hulled*

3/4 cup whole milk

2/3 cup granulated sugar (maybe add a 1/2 cup instead)

pinch of salt

1 1/2 cups heavy cream

1 1/2 teaspoons pure vanilla extract

Place strawberries in food processor with a fitted chopping blade and pulse strawberries until rough/finely chopped.

Reserve in bowl.

In medium bowl, whisk milk, sugar, and salt until sugar is dissolved.

Stir in heavy cream and vanilla.

Stir in reserved strawberries and all juices.

Cover and refrigerate 1 to 2 hours.

Pour mixture into frozen freezer bowl and let mix for 15-20 minutes.

Enjoy!

*Frozen strawberries can be substituted for fresh strawberries.

Happy Monday!!! I feel like I am sorta participating in Inspiration Monday today. I know it is not that similar to the inspiration but what's a girl gonna do when she doesn't have a printed maxi and it is too hot for any sort of jacket.
