It's already March 5th, which is crazy. The countdown is on for the wedding and I can't believe that I will be a married women in less than a month. It is crunch time and I still have things go get done. Those centerpieces seem to be my biggest problem as I am procrastinating about completing them. Maybe if I do one a night I will get them done soon. If you want to help, let me know and you can come over to help. I might even feed you dinner and wine!

Sunday either seems to fly by or go super slow. Today was one where it went pretty slow and I am ok with that. Matt and I headed out to breakfast and had delicious bagels and juice. Then off to do some wedding things and back home for Matt to do homework and do things around the house. I did get things accomplished. And a plus, I got a post up (and I got to wear my new neon sweater), which normally doesn't happen.

So I have felt SUPER proud of myself lately. For the past 8 weeks, technically I am still on week 8, I have been doing an at-home workout called GSP Rushfit with Matt. It is a mix of everything from cardio to abs to balance. It was so hard at the beginning but I am better at it now. I have better results from these dvds than going to the gym everyday. And I am gaining a ton of muscle in place I didn't even know I had muscle. The only problem I am having right now is I am having a hard time completing week 8. I think I am just sick of doing the program 5 times a week.

My goal from now till Sunday is to complete the 3 workouts that I have left.

It's Leap Day! I feel like it should be an Irish holiday but maybe that is just because of that silly movie "Leap Year." According to folk tradition, I should propose to Matt today. Since we are already engaged, I think I will let that one slide this year. Maybe in 4 more years I will. Instead of an engagment, he will get a dinner out of today.

T-minus 32 days till wedding day! It is fast approaching and there is still things to do. I mean little things, but those still require time. But one good thing is that I had my final dress fitting last Friday and it fits perfect. The alterations that I had done are great and I feel wonderful in my dress for the 10 minutes I had it on. I know I won't be feeling that way after being in that dress for 6 hours. We will see! The countdown is on!

Apple Crisp

Apple Crisp

(recipe courtesy of my mom)

4 tart apples, such as Granny Smith

1 cup oats

1/2 cup brown sugar

1/2 cup flour

1/3 cup butter*

1 tsp cinnamon

Preheat oven to 350F.

Wash and peel apple. Cut into slivers and arrange in bottom of pan.

Melt butter and stir remaining ingredients until topping mixture is moist and begins to stick together.

Spread topping evenly over the apples.

Bake for 30 minutes or until apples are tender.

Enjoy!

After pan is cool, store in refrigerator.

*I use less butter (1/4 cup) as I like a more crumbly topping.

Happy Monday! How was your weekend? Mine was great! On Friday night, Matt and I acted like the 20 somethings we should be and actually went out. Most of the time we just spend the night at home, lounging on the couch and watching tv. But this Friday was different! We met a friend of mine a local brewery for a few beers and dinner. Then we headed to the movies to see "Act of Valor," which was pretty good even though it makes your adrenalin pump the whole time. Those Navy Seals are pretty bad ass, if you ask my opinion. And those Army guys are too (for you Matt)!

Boston Cream Pie

Have you ever had Boston Cream Pie before? Before I made this last weekend, I have never had it but it made me think. Why is it called "pie" when it is actually a cake?

Boston Cream Pie (I used Whisk Kid's Recipe except I halved it)

2 c (278 g) cake flour*
2 tsp baking powder
1 1/2 c (298 g) sugar, divided
8 eggs, separated
1 Tbsp lemon juice
6 Tbsp vegetable Oil
2 tsp vanilla
Vanilla Custard (recipe follows)
Chocolate Glaze (recipe follows)

Preheat your oven to 350F. Oil and line three 9" round cake pans, then set aside.

Whisk together cake flour (see note below), baking powder and 1/2 cup (99 g) sugar in a small bowl. Set aside.

In a large bowl, whisk together the yolks, lemon juice, oil and vanilla. Beat on medium-high until slightly lightened, about 5 minutes. Set aside.

Pour the egg whites into a very clean large bowl. Begin beating on medium-low until foamy, then turn the speed up to high and gradually add the remaining 1 cup (198 g) of sugar. Beat until moderately stiff peaks form (when lifting the beater from the bowl, the peaks should droop slightly), being very careful not to whip the whites until they are dry.

After the whites have been whipped, use a rubber spatula to gently fold 1/4 of them into the yolk mixture. Add another 1/4 of the whites and fold to combine. Repeat until all of the whites have been incorporated, then sift in 1/3 of the dry ingredients. Fold gently until few streaks remain, then add another third. Repeat, continuing to fold very gently, until the last addition of dry ingredients has been fully incorporated.

Divide batter evenly between the prepared pans and bake for 15-20 minutes until the cake springs back when pressed lightly in the center. Cool the cakes in their pans on a wire rack for 10 minutes. Remove the cakes from their pans and wrap them in plastic wrap then refrigerate them for at least 4 hours until they are completely cooled.

*If you don't have cake flour, combine 1 3/4 c (248 g) flour and 1/4 c (30 g) cornstarch to substitute.

Vanilla Custard

2 Tbsp cornstarch
2 c (473 ml) milk (author suggests whole, I used skim without any trouble), divided
6 egg yolks
3/4 c (149 g) sugar
2 tsp vanilla

Combine the cornstarch and 1/4 cup (59 ml) of the milk in a large heatproof bowl, whisking until smooth and free of lumps. Whisk in the egg yolks and set aside.

Pour the remaining 1 3/4 cups (414 ml) of milk into a sauce pan and stir in the sugar. Bring to a simmer over medium heat, stirring occasionally to dissolve the sugar and prevent scorching.

When the milk begins to bubble, use a ladle to pour about a cup of it into the yolks, whisking quickly and immediately to temper them. Pour the tempered yolks into the pan with the rest of the milk and cook, whisking constantly, until the custard just begins to boil. Turn the heat down to low and boil gently, whisking constantly, for 1 minute.

Pour the cooked custard into a bowl and whisk in the vanilla (you have to add it last or it will boil off while cooking). Press plastic wrap directly onto the surface of the custard and chill until set and cool, 4-5 hours.

Chocolate Ganache

3/4 cup heavy cream
1/4 cup butter
3/4 cup semi-sweet chocolate morsels

Assembly
Level the three cakes. Put one down on a serving platter, and top with half of the vanilla custard. Spread the filling out to the edges, then add another layer of cake. Top with the remaining custard, spreading, again, to the edge of the cake. Cover with the last round of cake, bottom side up, and pour the chocolate glaze over the top.

This cake was delicious and pretty simple to make even though it took a long time before I was able to eat it. I kept it in the fridge and it was even better super cold!

Have a ever told you that I hate the wind? I really hate the wind when it blows a million miles an hour and wakes you up an hour before your alarm goes off . At that point you just lay there and listen to it blow against the side of your house. This of course happened this morning. Following this crazy wind was snow and white out conditions. The drive to work this morning was slow and visibility was horrible. But I made it safe and sound in one piece. So I pretty much still HATE the wind!

These were taking last week when we had the same conditions! But at least it was a Friday and I really didn't have anywhere to go.

Even though yesterday was Tuesday and not Monday, I surely had a case of the Mondays. Throughout the day I forgot to do things and in turn had to complete them today. A four day weekend sure does kill my brain when it comes to work. First off, I forgot the camera when I had to make a field visit. Then I realized that I didn't have my phone or my work phone with me. When I finally set up my work equipment, I had to go back to the car 3 times to get more things that I forgot. I really don't know what my problem was, but today I am doing better.

Ever have a day when that happens to you? Just forget everything that you were meaning to get?

Oh back to work today! It was nice to have an extra long weekend. I am also excited to announce my big news in my Exciting News post. That's right! We are moving to Kentucky the end of April. For those who don't know, my soon-to-be husband is in the Army and we are being stationed at Fort Knox, which is outside of Louisville, in May. I am excited to explore and experience and new state and all of the surronding area. I have never really been to the south and will get to experience all of it.

On Saturday, my parents, Matt, and I headed to Cripple Creek, Colorado for the Ice Festival. This small mountain town it known for it mining and gambling. It was my first year at the Ice Festival and I enjoyed every minute of it because it was a Tribute to the Military.

Happy President's Day! I am happy to have a 4 day weekend and was able to get a lot of things done. It started out with me wearing these new tights and hanging out with my love. Matt and I even got out of the house and took a little day trip with my parents, which involved ice sculptures and slot machines. The rest of the weekend was pretty relaxing as we caught up on tv shows, ate chicken enchiladas, and got some frozen yogurt.

On Saturday, I had my bridal shower thrown by my 2 wonderful aunts and best friend/matron of honor. It was held at my parent's house and was a ton of fun even if I was still sick. There was lots of yummy food, great company, and funny little games. I got some great things for the house and some pieces to share with Matt at a later time. (wink, wink!) Thanks to those who came!

I know I didn't go with a dress of my Bridal Shower Wear post, but I thought that this one was fitting as it is floral also. What do you think?

Happy Valentine's Day! I love the fact that I can eat chocolate and not feel guilty about it. And I love being able to tell everyone I see "Happy Valentine's Day!"

Date night tonight with the one I love the most, which will consist of cheese and chocolate fondue at home tonight. I haven't made fondue in forever but I think I remember how to do it. We are keeping it pretty low key because we have been so busy lately and who really wants to head out with all the other people out tonight.

Wednesday and Thursday I spent the day at home (thinking I had strep) and then heading to the doc for a strep test. Turns out it was negative and all I got was a verbal prescription of cough drops and Motrin. Not the greatest day for me. But after getting a full night of sleep on Thursday, I was able to get dressed and join the living world again (even though I still wasn't feeling the greatest). So not to shabby for being sick!

Oscar thought he would participate this week too!

I love the snow and was super excited last week when I got home from work and it was snowing. In my head, I thought "Picutres in the snow would be great." Maybe I didn't think it through all the way first.

Words of advice...taking pictures while it was snowing this hard is not a good idea (unless you are under something). #1-Your hair and clothes get soaked (there goes my curly hair for the day). #2-Your camera gets all wet and the lens gets covered with snow. #3-You look like you have a ton of snow in your face because the camera catches you at the right moment when there is a big flake right in your line of sight.

So I guess I learned a lesson out of this. Don't curl my hair on days its gonna snow! And my camera needs a rain/snow coat!

Since I was not willing to talk about it yesterday, I thought today would be better. So my shortened theft story goes like this. Monday night I received a phone call from the police department asking if I was expecting to receive a package in the mail that day from a specific company. I told the officer no but for the wedding we are registered with this company. Come to find out was a package was taken from my porch along with 5 other people's house in the area. The police had found the box, the packing invoice and the card but not the contents. So at this time it is under police investigation and I am just waiting to find out the outcome.

Kind of a crazy story, I know!

How was your weekend? Mine was spent doing wedding stuff (like every weekend so far and every weekend in the future), filled with yummy food, and relaxing with Matt. Since the beginning of the year, Matt and I have been eating more healthy and working out a lot more. I have been looking for new healthier recipes that are easy but also delicious. This weekend we tried slow cooker chicken (it shreds great) that I found on Pinterest. They were super yummy and makes a ton of food. So Saturday we had tacos and Sunday I used the chicken on homemade pizza. Now I just need a recipe for tonight where I can use that chicken. Any ideas?

All black reminds me of my dog, Oscar, as he is mostly black with a little white on his tummy and paws. Which brings me to a story about him. This weekend Matt and I were both sitting on the couch and Oscar jump up to sit with us. He didn't quite make it and his chest/tummy landed on Matt's leg. He made the most funny sounding grunt noise like the wind was knocked out of him. Anyway, Oscar just laid there looking at us while we laughed. He then got down, jumped up again and snuggled up under the blanket with me. He is silly!

Last week there was a bit of a warm up with temps in the 60s. For January, that is great and I took full advantage of it. See no tights and bare legs. I love the winter and the snow but it is always nice to have a warm break for a couple of days. Today, however, is not the case with cold, wind and a tiny bit of snow.

Music Obsession

My current music obsession is with Florence + The Machine and Ellie Goulding. Have you heard of them? Probably! I downloaded both albums from Florence + The Machine last night and have been listening to them all morning. And the rest of the week has been spent listening to Ellie Goulding (she sang at the Royal Wedding last April and does a cover of "Your Song" by Elton John). I pretty much have her album memorized already. Too bad I didn't have all this new music when I was on my road trip. Well I will let you get back to what you were doing and I will be here listening to these great artists!

I wish I was feeling as well right now as I was when I was taking these pictures (still battling my cold). The scenery is complements of Oregon (not the prettiest, right? but at least they have some mountains) from our little trip we took after Christmas. While we were there, the sun never really came out and it was cold and rainy the whole time. Maybe my yellow shirt made it a little more cheery that day! I'm glad that I live in a state where the sun does come out in the winter.

I have been fighting a cold all week and this weekend I tried to rest some so that I could make it to work today. It seemed to have worked since I am sitting her at work! Even though one of my coworkers already told me this morning that I do look a little run down. Also this weekend I was able to get more wedding stuff done as the wedding is getting close. What Resolution

I'm not one that makes New Year's Resolutions and this is year is no exception. The way I see it is that most people who make New Year's Resolutions typically don't follow through with them after about a month. So why you would want to do something that you would fail. But I am not trying to knock those who do make New Year's Resolutions, they are just not for me. Why not make a goal or goals for yourself that you can you know you can succeed at. Since I have a wedding coming up in less than 3 months (it's so soon), I have been in pre-wedding workout mode. For Christmas, Matt got GSP Rush Fit and for the past 3 days we have been doing it. It surely kicks my butt! Just wait a 8 weeks till I finish the beginner workouts. Hopefully I will be in better shape (even though I always say 'round is a shape').

Back to work since my vacation and man is it going slow. But I guess I shouldn't complain because I only have to work 2 days this week. We got back from Oregon on New Year's Eve and didn't even get to see the ball drop. I was asleep 15 minutes before the New Year but after spending 12 hours in the car it was needed. C'mon give me a little of a break!

Oregon Trip

Happy 2012! I am so excited for the new year and everything that is going to happen this year, but I am sad that the holidays are over. I haven't been around much this past week because Matt and I traveled to Oregon to see his family. It was a long couple of days of driving (through 5 different states), burrows in the road, snow, dust storms, some beautiful mountains, and some road closures. But we mad it home last night to ring in the New Year at home (even though we were sleeping because 12 hours on the road driving is tough).

After sitting in a car all day yesterday, I was glad to spend the night at a hotel in Nevada where we could get some gambling done. Of course I didn't wear this in the car all day; I actually wore this last week and forgot to post it. I got these wedges about a month ago and decided it was time to wear them. I came to the realization that 1.) I suck at wearing any kind of heel, 2.) I am way taller than Matt and 3.) They work perfect with these skinny jeans and would look great with flares.

I got a great surprise this morning! It has been snowing all night and my work was closed till 9 this morning. I didn't get to sleep in since I was up at normal time but I did finish the Christmas stockings that I have been working on and I got to catch up on a few shows while the snow continued to fall outside. Maybe it will keep snowing and I will get to go home early. Working a half day because of the weather is perfectly fine with me since I have a few more Christmas presents to get before the weekend!

Christmas treats are always so amazing no matter what they are. And I can't seem to get enough of them. Snow and Deer

It's like a winter wonderland outside and I have to say I love it! Even though my drive into work was a pain and there was a dumb deer with one antler standing in the middle of the road. And this deer only had one antler (think Max on the How the Grinch Stole Christmas) and just was staring at nothing. It snowed like 5-6 inches and it is so beautiful. The mountains always look so pretty all covered in snow. So today my goal is to stay warm and make it home in one piece. Have a great Tuesday!

Grandma Time

On Friday, I spent most of the morning with my grandma getting her a new cell phone and then heading to lunch. It's so funny to go into the phone store with her where she gets all sorts of confused by all of the new technology. She always gets the same phone with no internet access or anything. She doesn't even text and only calls on it when she remembers where it is. I love hanging out with my grandma (and another plus was getting a free lunch).

I am so ready for a vacation that I am counting down the days till I have a break from work. Lets see 5 more work days and I will be all done for almost 2 weeks. Maybe during my actual vacation I will get to go skiing with Matt and my brother. We are also traveling to see Matt's family between Christmas and New Years. This past weekend my work had their annual Holiday Party for the engineering staff and we decided to dress up more since we don't get the opportunity to very often. It is always a good time and a great way to see how your co-workers act outside of work. There is a white elephant gift exchange, so we decided to take a 2 pound candy cane that Matt got me as a joke. At the party, we got a t-shirt saying "Honey Badger vs Cobra" (there is a YouTube video featuring it). Overall it was a great night even though the food was so-so.

I actually feel proud of myself since this is the actual outfit that I am wearing today (I even took these pictures before work and I ended up running a little late). I usually take my Two Birds Inspiration Monday outfit pictures over the weekend but it seemed to slip my mind this weeknd with the 2 Christmas parties and wedding planning I had to complete.

The shoes I wore in the picture I had to ditch before I left the house. I knew I couldn't last a whole day in those today after wearing heels on Friday for most of the day. I will have to try again later this week.

I feel like the only thing I wear on my feet anymore is boots. The weather just is not cooperating to let me wear a pair of flats or even the new pairs of wedged heels that I got a weeks ago. I feel like boots are the only shoes that keep my feet warm. With the exception of my slippers. Tomorrow is my work's holiday party and I know for sure that I will not be wearing boots.

I love to bake! Last weekend I made homemade gingerbread cookies and today while checking my email I found a great recipe for chocolate cookies with powdered sugar on top. I can't wait to try them and see how they turn out. I also need to get my ingredients ready for the macroons that I make around Christmas. See I grew up with a mother that always baked a ton of Christmas treats for us to eat and to give to family and friends. Let me know if you want some treats aka cookies and I will make sure santa brings some to your house.

Honeymoon Options

Wedding day is approaching fast! Matt and I are still trying to determine where we want to go for our honeymoon and how long we should go. Right now the options are Hawaii, Jamacia, or the Bahamas. We are going in April and it will be great to go to somewhere with warm weather and a beach after going though a Colorado winter.

Never did I think that I would wear an entire outfit from one store and this happened by chance. Yesterday I ventured out in the cold arctic weather to the head to the movies with my friend where I wore this Target outfit. I had to see Breaking Dawn to satisfy my inner Twi-hard's need. I thought it was really good and set up good to see the next one, which will be better with even more action.

How was your weekend? Maybe warmer than mine. I woke up this morning to 7 degrees outside which actually felt like -10 degrees. And then I would expect my office to be warm but this morning it was a whole 62 degrees in here. Way to start a Monday! I pretty much wore my hat till 9 AM and still have a blanket over me. Maybe it will be warmer in here by lunch.

Brr it is cold today! Just seems that now December has started the cold temperatures have set in. Guess that means I will spending most of the day inside catching up on my favorite shows from the week. Hope you had a great Thursday! I did and it was great that work went by so fast. Helps that I had a deadline and plenty to work on. Now I am ready for the weekend even though I don't have much planned. It's suppose to be pretty cold this weekend with highs only in the 20s and 30s. Guess I will just hang out at home most of the weekend.

Plus this Thursday night ended up being especially great since I got to watch one of my favorite Christmas movies "The Santa Clause".

Ever have an off day or night? Yesterday was one for me. I mean work was fine and then last night I was just a little off. For Thanksgiving, my job was to make the pies. Of course I made the traditional pumpkin pie in homemade crust. Matt on the other hand wanted something a little different. Wow the weekend seemed to go by fast and slow at the same time. Thrusday thru Saturday flew by but yesterday seemed to drag on, which is ok with me on any Sunday! This weekend I got most of my wedding invitations done and some other wedding things figured out. Wedding day is getting closer. Only 4 months from Wednesday and it will be here. Also, Matt and I put up the Christmas decorations up on Saturday and then yesterday we put up light on the house. Matt home=more lights on the house. I even had to run to the store to get more!

How was your Thanksgiving? Mine was pretty relaxed and full of wonderful food and family. We spent the afternoon over at my grandma's house where we watched football and played it. Today was pretty relaxed too with Matt and I heading to the movies to see "Jack and Jill," which was only okay. We didn't do any crazy Black Friday shopping and there was no getting up at 3 am. After the movie, I wasn't feeling too well so I came home and took a 2 hour nap which made me feel better. Hopefully some more sleep can make be feel better.

It's almost time for Thanksgiving and this year I am working up till the last minute. I usually take the day before Thanksgiving off so that I can help get ready for family. Darkness

Having to take outfit picutres inside all the time is starting to frustrate me. I don't see a way I could take them outside in the dark. It's dark when I go to work in the morning and dark when I get home at night.The only solution I have at this point is take them in different places in my house until the weekend comes and I can actually take them outside.

But last night, while stopping by my parent's house, I mentioned that I wanted a tripod for Christmas for my camera. Just so happens that my mom says I think we have one that we got for free that you can have. She headed out to the garage and comes in with a dust covered box with a brand new tripod inside. She hands it to me and says "Merry Christmas! Glad I could get your Christmas present done early." Thanks mom!

How was your weekend? Mine was great but went too fast. Maybe it is because this week is Thanksgiving week. So last night I was watching Harry Potter and the Deathly Hallows, Part 2 while I was crocheting in bed. Harry, Ron and Hermione get to Hogsmeade and meet up with Aberforth Dumbledore. Well I realized that one of my coworks reminds me of Aberforth with the way that he looks expect my coworker need a longer and fuller beard. I just kept laughing and thinking I can't wait to tell him (he is also a big Harry Potter fan). I told him this morning and he just laughed. He is such a good sport!

No it hasn't snowed again. I am just slacking on posts and have some from a couple of weeks ago that I need to add. And today I have completely changed my look and have nice clothes. I may look better but I don't feel better. I am feeling a little out of sorts today because my work day yesterday was so long and didn't have time to recooperate last night. I actually wore this outfit last week or maybe 2 weeks ago and thought it was better than what I am wearing today.

The weekend is over and its now time to head back to work! This weekend was great and I got to spend time with my brother who was home from college for the weekend. We headed to the Wyoming-Air Force football game, where Wyoming won (GO POKES!) and then had dinner at home (thanks mom for the wonderful lasagna). It was also my dad's birthday and we had a little party for him. Well brother headed back to school yesterday but only another week and I will see him again! Yay for holidays!

I love the days that I can wear a skirt and still show a little bare leg. It just means that there are still some warm days left before it's time to wear tights all the time. I will take a day in the upper 50s or 60s where I don't have to wear tights. And I do live in Colorado where the weather is so unpredictable. It wouldn't surprise me one bit if there is a 70 degree day in January or a 20 degree day in September. So I will take any day that I can wear show a little leg.

I love books and always have one that I am working on. Right now I am reading The Girl with the Dragon Tattoo (I know I am a little late on reading it). I was reading a chapter about murders. As I was reading, for some reason it began to scare me. Maybe it was because Matt wasn't home or that the text painted a pretty grusome picture. I know that I am a big chicken and get scared by a lot of things. I guess I have a couple of options for reading, either read while Matt is home or maybe just during the day. Hmm.

I actually wore this a couple weeks ago but somehow I forgot to post it. I thought that it went well with the fall foliage that was outside, which now there are no more leaves on the trees anymore. We have already had a couple of snow storms and its been pretty chilly here lately. It seems like every week, like on Wednesday, it has snowed here and then by the weekend it is 60 out. At least, it is nice on the weekends when I can actually be outside.
